Black Valentine Bean Salad with Cumin & Cilantro
Ingredients
- Salad:
- 2 cups cooked 1/2 pound dry Black Valentine Beans--rinsed
- 1 cup onions--diced
- 1/4 cup red peppers--diced
- 1/4 cup red onions--diced
- 1/8 cup red cabbage--diced
- 1/8 cup carrots--diced
- 1/4 cup cilantro
- 3 cloves garlic--minced
- Cumin Vinaigrette:
- 1/4 cup cider vinegar
- 1/2 Tbsp. Dijon mustard
- 3/4 tsp. ground cumin
- 1/2 tsp. minced garlic
- 1/2 tsp. freshly ground black pepper
- 1/4 tsp. salt
- 3/4 cups extra virgin olive oil
Instructions
- Chop vegetables. Combine in large bowl.
- Mix vinegar, mustard, cumin, garlic, pepper, and salt in a small bowl and whisk well.
- Slowly drizzle in the olive oil, whisking constantly until smooth. Pour over combined salad ingredients.
- Refrigerate for several hours before serving.
