Black Valentine Bean Salad with Cumin & Cilantro

Ingredients
  

  • Salad:
  • 2 cups cooked 1/2 pound dry Black Valentine Beans--rinsed
  • 1 cup onions--diced
  • 1/4 cup red peppers--diced
  • 1/4 cup red onions--diced
  • 1/8 cup red cabbage--diced
  • 1/8 cup carrots--diced
  • 1/4 cup cilantro
  • 3 cloves garlic--minced
  • Cumin Vinaigrette:
  • 1/4 cup cider vinegar
  • 1/2 Tbsp. Dijon mustard
  • 3/4 tsp. ground cumin
  • 1/2 tsp. minced garlic
  • 1/2 tsp. freshly ground black pepper
  • 1/4 tsp. salt
  • 3/4 cups extra virgin olive oil

Instructions
 

  • Chop vegetables. Combine in large bowl.
  • Mix vinegar, mustard, cumin, garlic, pepper, and salt in a small bowl and whisk well.
  • Slowly drizzle in the olive oil, whisking constantly until smooth. Pour over combined salad ingredients.
  • Refrigerate for several hours before serving.
