Three Bean Pepper Salad

A salad for the true adventurer! Pick any three beans to make this tasty dish. We recommend Painted Lady, Zebra, Valentine, Arikara, Spanish Tolosana, Jacob’s Cattle, or… pretty much any other!

Three Bean Pepper Salad


  • 1-1/2 cups cooked beans of each of three types; may use Black Valentine Jacob's Cattle and Zebra (about 1/2 cup dry or 1/6 of a pound of each), drain and cool
  • 1 red onion chopped
  • 2 garlic cloves minced
  • 1 red 1 green, and 1 yellow bell pepper, seeded and chopped
  • 2 jalape?o peppers seeded and chopped (optional)
  • Dressing:
  • 1/2 cup chopped fresh cilantro or 2 TBSP. dried cilantro
  • 1 tsp. ground cumin
  • 1 tsp. ground black pepper
  • 1 tsp. sea salt
  • 1/4 cup olive oil
  • 1/2 cup red wine vinegar
  • juice of 2 limes


  • In a large bowl, combine salad ingredients. Toss well. Combine dressing Ingredients in a small container with a lid; shake well. Right before serving, pour dressing over salad and mix to coat.
