Three Bean Pepper Salad

A salad for the true adventurer! Pick any three beans to make this tasty dish. We recommend Painted Lady,¬†Zebra, Valentine, Arikara, Spanish Tolosana, Jacob’s Cattle, or… pretty much any other!

Three Bean Pepper Salad


  • 1-1/2 cups cooked beans of each of three types; may use Black Valentine Jacob's Cattle and Zebra (about 1/2 cup dry or 1/6 of a pound of each), drain and cool
  • 1 red onion chopped
  • 2 garlic cloves minced
  • 1 red 1 green, and 1 yellow bell pepper, seeded and chopped
  • 2 jalape?o peppers seeded and chopped (optional)
  • Dressing:
  • 1/2 cup chopped fresh cilantro or 2 TBSP. dried cilantro
  • 1 tsp. ground cumin
  • 1 tsp. ground black pepper
  • 1 tsp. sea salt
  • 1/4 cup olive oil
  • 1/2 cup red wine vinegar
  • juice of 2 limes


  • In a large bowl, combine salad ingredients. Toss well. Combine dressing Ingredients in a small container with a lid; shake well. Right before serving, pour dressing over salad and mix to coat.
