Roasted Leg of Lamb
A simple, no-frills roasted leg of lamb.
- 1 Leg of Lamb, bone-in 2-3 pounds
- 1 tbsp olive oil or melted butter
- 2 cloves garlic, minced
- 1 tsp chopped rosemary
- 1 tsp chopped thyme
- 1 tsp salt
- 1/2 tsp pepper
Preheat oven to 350 degrees F.
In a small bowl, combine olive oil (or butter) herbs, salt, and pepper.
Place leg of lamb fat side up on a roasting rack. Spread garlic and herb mixture evenly over the lamb.
Place in oven and cook until the internal temperature reaches 135 degrees F. This should take about 1 hour 15 minutes to 1 hour 45 minutes (or until desired doneness).
Let rest 15 minutes before slicing and serving.
