Roasted Leg of Lamb

A simple, no-frills roasted leg of lamb.

Cook Time 1 hour 30 minutes
Resting Time 15 minutes

Ingredients
  

  • 1 Leg of Lamb, bone-in 2-3 pounds
  • 1 tbsp olive oil or melted butter
  • 2 cloves garlic, minced
  • 1 tsp chopped rosemary
  • 1 tsp chopped thyme
  • 1 tsp salt
  • 1/2 tsp pepper

Instructions
 

  • Preheat oven to 350 degrees F.
  • In a small bowl, combine olive oil (or butter) herbs, salt, and pepper.
  • Place leg of lamb fat side up on a roasting rack. Spread garlic and herb mixture evenly over the lamb.
  • Place in oven and cook until the internal temperature reaches 135 degrees F. This should take about 1 hour 15 minutes to 1 hour 45 minutes (or until desired doneness).
  • Let rest 15 minutes before slicing and serving.
