2cups(about 1/2 pound) Marrow beans or other light colored beans, cooked
1-2clovesgarlic
1Tbsp.chopped fresh dill or 1 tsp. dried dill
2Tbsp. lemon juice concentrate, or juice of 1/2 lemon
1/4tsp. salt
1/8tsp.black pepper
2-3Tbsp.olive oil
Instructions
Cook beans until soft and drain.
Purée cooked beans in a food processor. Add garlic, dill, lemon juice, salt, and pepper and continue to purée. Add olive oil slowly, continuing to blend until mixture is smooth.
Add salt and pepper to taste. Garnish with additional herbs. Serve cold with crackers or veggies.
