Garlic Dill Bean Dip

Course Appetizer

Ingredients
  

  • 2 cups (about 1/2 pound) Marrow beans or other light colored beans, cooked
  • 1-2 cloves garlic
  • 1 Tbsp. chopped fresh dill or 1 tsp. dried dill
  • 2 Tbsp. lemon juice concentrate, or juice of 1/2 lemon
  • 1/4 tsp. salt
  • 1/8 tsp. black pepper
  • 2-3 Tbsp. olive oil

Instructions
 

  • Cook beans until soft and drain.
  • Purée cooked beans in a food processor. Add garlic, dill, lemon juice, salt, and pepper and continue to purée. Add olive oil slowly, continuing to blend until mixture is smooth.
  • Add salt and pepper to taste. Garnish with additional herbs. Serve cold with crackers or veggies.
