Soak einkorn berries with vinegar overnight. In the morning, drain and spread out on a cookie sheet with edges. Dry completely by baking them 1-2 hours at the lowest temperature setting on your oven, stirring once or twice.
Remove the einkorn berries from the oven and preheat to 500. While the oven is preheating, combine melted butter, honey, and salt in a bowl.
Once the oven is heated, place the cookie sheet back in and bake until berries crack open--about 3-5 minutes.
Stir roasted berries into butter mixture until they are evenly coated. Use as a topping for yogurt parfaits.
