Maple Baked Beans

Ingredients
  

  • Maple Baked Beans:
  • 1 pound Arikara or Jacob's Cattle Gold beans
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 1 bay leaf
  • 3/4 pound bacon cut in small pieces
  • 1/2 teaspoon salt
  • 2 teaspoons dry mustard
  • 3 glugs of maple syrup 1/4-1/2 cup

Instructions
 

  • Cook beans until just tender. Drain and put in slow cooker.
  • Add onion, garlic, bay leaf, raw bacon, salt and mustard. Add syrup and water enough to cover beans.
  • Cook on high for 4 hours, stirring occasionally. Add a bit of hot water if needed to keep the top layer just nicely submerged. Remove the lid for the last hour of cooking so the beans thicken.
