Spiced Squash Spelt Bake

Ingredients
  

  • 1/2 lb bacon cooked
  • 2 Tbsp olive oil
  • 1 large onion chopped
  • 2 tsp garam masala
  • 2 tsp salt
  • 1/2 tsp pepper
  • 1 1/2 cups spelt berries
  • 3 cups chicken broth/stock
  • 3 cups butternut squash diced
  • 1/2 cup parmesan cheese

Instructions
 

  • Preheat oven to 375℉.
  • In a dutch oven, heat the olive oil over medium heat. Add the chopped onion and cook for 6-8 minutes or until tender and starting to turn brown. Add spices and cook for 1 more minute.
  • Add the spelt berries and chicken broth and bring to a boil. Reduce heat to a simmer.
  • Place squash on top of the spelt, cover, and bake for 30-45 minutes, until the squash is tender and the spelt berries are done. (They will still be chewy.)
  • Chop cooked bacon into large 1" pieces and place on top of squash. Sprinkle cheese on top and bake 15-20 minutes longer, uncovered. Serve warm.
