Preheat oven to 375℉.
In a dutch oven, heat the olive oil over medium heat. Add the chopped onion and cook for 6-8 minutes or until tender and starting to turn brown. Add spices and cook for 1 more minute.
Add the spelt berries and chicken broth and bring to a boil. Reduce heat to a simmer.
Place squash on top of the spelt, cover, and bake for 30-45 minutes, until the squash is tender and the spelt berries are done. (They will still be chewy.)
Chop cooked bacon into large 1" pieces and place on top of squash. Sprinkle cheese on top and bake 15-20 minutes longer, uncovered. Serve warm.
