This bean dip is the perfect addition to a charcuterie board, or great as a stand-alone appetizer with some veggies or crackers. It’s creamy, yet full of flavor. If you are feeling adventurous, you can switch up the spices for an endless variety of dips!

Garlic Dill Marrow Bean Dip
Ingredients
- 2 cups (about 1/2 pound) Marrow Beans or other light colored beans, cooked
- 1-2 cloves garlic
- 1 Tbsp. chopped fresh dill or 1 tsp. dried dill
- 2 Tbsp. lemon juice concentrate, or juice of 1/2 lemon
- 1/4 tsp. salt
- 1/8 tsp. black pepper
- 2-3 Tbsp. olive oil
Instructions
- Cook beans until soft and drain.
- Purée cooked beans in a food processor. Add garlic, dill, lemon juice, salt, and pepper and continue to purée. Add olive oil slowly, continuing to blend until mixture is smooth.
- Add salt and pepper to taste. Garnish with additional herbs. Serve cold with crackers or veggies.
