This dish is Shady Side Farm’s no-tomato twist on classic baked beans. Try it with Jacob’s Cattle, Dapple Grey, Arikara Yellow beans, or another firm-but-yielding variety.

Maple Baked Beans
Ingredients
- Maple Baked Beans:
- 1 pound Arikara or Jacob's Cattle Gold beans
- 1 large onion chopped
- 2 cloves garlic minced
- 1 bay leaf
- 3/4 pound bacon cut in small pieces
- 1/2 teaspoon salt
- 2 teaspoons dry mustard
- 3 glugs of maple syrup 1/4-1/2 cup
Instructions
- Cook beans until just tender. Drain and put in slow cooker.
- Add onion, garlic, bay leaf, raw bacon, salt and mustard. Add syrup and water enough to cover beans.
- Cook on high for 4 hours, stirring occasionally. Add a bit of hot water if needed to keep the top layer just nicely submerged. Remove the lid for the last hour of cooking so the beans thicken.
