Summer Refresher Salad
Ingredients
Salad:
- 1/2 cup uncooked spelt berries
- 1 cup uncooked Lina Cisco's Bird Egg beans
- 1 pear, cored and cut up
- 2/3 cup dried cranberries or raisins
Dressing:
- 3 tbsp extra virgin olive oil
- 3 tbsp balsamic vinegar
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Rinse and presoak beans and spelt berries; discard soaking water.
- Place together in saucepan with 4 cups water. Bring to boil, reduce heat to medium, and continue cooking 30-40 minutes.
- Drain and let cool. Add other ingredients. Serve cold.
