Summer Refresher Salad

Ingredients
  

Salad:

  • 1/2 cup uncooked spelt berries
  • 1 cup uncooked Lina Cisco's Bird Egg beans
  • 1 pear, cored and cut up
  • 2/3 cup dried cranberries or raisins

Dressing:

  • 3 tbsp extra virgin olive oil
  • 3 tbsp balsamic vinegar
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions
 

  • Rinse and presoak beans and spelt berries; discard soaking water. 
  • Place together in saucepan with 4 cups water. Bring to boil, reduce heat to medium, and continue cooking 30-40 minutes.
  •  Drain and let cool. Add other ingredients. Serve cold.
