A hearty, oven-baked dish featuring spelt berries, sweet butternut squash, smoky bacon, and warm garam masala for a cozy, spiced twist.

Spiced Squash Spelt Bake
Ingredients
- 1/2 lb bacon cooked
- 2 Tbsp olive oil
- 1 large onion chopped
- 2 tsp garam masala
- 2 tsp salt
- 1/2 tsp pepper
- 1 1/2 cups spelt berries
- 3 cups chicken broth/stock
- 3 cups butternut squash diced
- 1/2 cup parmesan cheese
Instructions
- Preheat oven to 375℉.
- In a dutch oven, heat the olive oil over medium heat. Add the chopped onion and cook for 6-8 minutes or until tender and starting to turn brown. Add spices and cook for 1 more minute.
- Add the spelt berries and chicken broth and bring to a boil. Reduce heat to a simmer.
- Place squash on top of the spelt, cover, and bake for 30-45 minutes, until the squash is tender and the spelt berries are done. (They will still be chewy.)
- Chop cooked bacon into large 1" pieces and place on top of squash. Sprinkle cheese on top and bake 15-20 minutes longer, uncovered. Serve warm.
