Honey Roasted Einkorn Berries
Ingredients
- 1/2 cup einkorn berries
- 1 tsp apple cider vinegar
- 2 tsp butter melted
- 2 tsp honey
- 1/4 tsp sea salt
Instructions
- Soak einkorn berries with vinegar overnight. In the morning, drain and spread out on a cookie sheet with edges. Dry completely by baking them 1-2 hours at the lowest temperature setting on your oven, stirring once or twice.
- Remove the einkorn berries from the oven and preheat to 500. While the oven is preheating, combine melted butter, honey, and salt in a bowl.
- Once the oven is heated, place the cookie sheet back in and bake until berries crack open--about 3-5 minutes.
- Stir roasted berries into butter mixture until they are evenly coated. Use as a topping for yogurt parfaits.
